Healthy Chicken Stir Fry
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup broccoli florets
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
Instructions:
- In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
- Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through.
- Add the onion, bell peppers, and broccoli to the skillet and cook, stirring occasionally, until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil.
- Add the sauce to the skillet and stir to combine. Cook for 1-2 minutes, or until the sauce has thickened.
- Serve immediately.
Tips:
- For a healthier stir-fry, you can use brown rice or quinoa instead of white rice.
- You can also add other vegetables to your stir-fry, such as carrots, mushrooms, or snow peas.
- If you don't have cornstarch, you can substitute 1 tablespoon of all-purpose flour.
- If you want a spicier stir-fry, you can add a pinch of red pepper flakes to the sauce.
