Healthy Chicken Stir Fry

Ingredients:

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions:

  1. In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
  2. Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through.
  3. Add the onion, bell peppers, and broccoli to the skillet and cook, stirring occasionally, until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil.
  5. Add the sauce to the skillet and stir to combine. Cook for 1-2 minutes, or until the sauce has thickened.
  6. Serve immediately.

Tips:

  • For a healthier stir-fry, you can use brown rice or quinoa instead of white rice.
  • You can also add other vegetables to your stir-fry, such as carrots, mushrooms, or snow peas.
  • If you don't have cornstarch, you can substitute 1 tablespoon of all-purpose flour.
  • If you want a spicier stir-fry, you can add a pinch of red pepper flakes to the sauce.
